Since starting to commit to eating healthy this year, I cleaned up my pantry and found this bottled Spanish-style sardines in olive oil. Nope, it’s not homemade sardines but store-bought. I had almost forgotten it and was just begging to be eaten. So I decided to make linguine with sardines which is basically a stirfry of pasta, tomatoes, olives, fresh basil, garlic and the sardines. This simple and easy to make pasta dish I’d like to share with Presto Pasta Nights hosted this week by Girlichef at Girlichef.
It’s quite easy. I usually prepare pasta dishes good for one serving, which is around 40-50 grams uncooked pasta. In this case, I used linguine which I cooked al dente. Next, in a pan, sauté some garlic and 2-3 sardine slices, add some olive oil from the bottle then the sliced seed tomatoes and chopped basil. Add about a tablespoon of water or reserved pasta water, season with salt and pepper, let simmer then mix the linguine until well coated with sauce. Serve immediately. You can top this with chilli flakes for added heat. This is a hearty one-dish meal.
