Liempo or pork belly makes for a very tasty pork barbecue. It is one favorite dish that we cook at home, especially when every one is at home. The simplest way to grill it is to rub salt to the liempo then grill. That’s it!
But since I a continuing my fennel high streak these days, why not add more to liempo barbecue? Add fennel! Fennel seeds are really great with meat. It is simple to make. Just mix whole peppercorns and fennel and grind roughly in a mortar and pestle. Rub to liempo slices, mix soy sauce and a tbsp of sugar and rub on the meat then marinate for an hour (if you’re not that hungry) or just a few minutes (if you are really hungry!). Grill till cook. Enjoy!
Barbecue won’t be complete without a dipping sauce. In this case, I combined chopped tomatoes and onions with soy sauce. I also chopped some chilis to make it hot! And it goes well with rice, of course!

The photo of the liempo looks sooooo good! Yum! It is also good with mango salsa, grilled eggplant and steamed rice. This is how we serve liempo at home.
