One of the things I love about my job is the chance to eat local cooking done by the workers during our field visit. We’d buy the ingredients and they would cook for us and everyone shares one big meal. Here are some of the dishes I’ve sampled in one of our trips.
Sinigang na liempo with hilaw na langka (Pork belly sinigang with unripe jackfruit) This is my first time to try unripe jackfruit and sinigang. The jackfruit is meaty and chewy, adding another layer to eating liempo. It balances the fat from the leimpo and the sourness as well. I really have to cook something like this!
Inihaw na isda (Skewered whole fish) Another yummy treat…
Two versions of tinola – fish and chicken.
Chicken tinola usually uses native chicken, with lots of siling labuyo leaves. Note that you have to cook the chicken early to tenderize it, otherwise you’d have your lunch late!

    I tried Skewered whole fishes. They were delicious… My wife and I went to a lake and had a fire. I roasted fishes by putting Patan ghee on it… It was delicious…Man… I love them… Skewered fishes and Patan ghee is the best combination to eat…..
