I really like the combination of Italian sausage, pasta and red sauce. So when I made Italian sausages for the first time, I used part of it in making this really delicious pasta with Italian sausage.
Linguine pasta with homemade Italian sausage
250 grams uncooked linguine pasta
3 pieces (~150 grams) homemmade Italian sausage
3 cloves garlic, minced
1 piece onion, chopped
1 medium sized carrot, chopped
1 can diced tomatoes
1 tsp each dried basil leaves, oregano leaves and rosemary leaves
1. Cook linguine according to package instructions.
2. While cooking pasta, prepare the sauce.
3. Brown sausage in olive oil. I used homemade Italian sausage which I didn’t put into sausage skins. Break sausage into pieces while browning it.
4. Add onions, garlic and carrots and saute some more. Add the dried herbs.
5. Add the diced tomatoes, including the juice.
6. Simmer for five minutes. Season with salt and pepper.

Home made sausages reminded me of the ones my friend’s mother used to make and bring back from Goa – they were flavoured with spices and similar to chorizo – delicious when fried and cooked with rice with no oil or any other spices needed. – voila sausage pulao!
