Breakfast Ziploc Omelets

This method of cooking omelets tickled my fancy. I first learned about cooking with Ziploc to make omelets from Joy of No Fear Entertaining. It’s so easy to make and the omelet is perfectly poached!

In a bowl, whisk two eggs then add your choice of omelet stuffing. For my first Ziploc omelet, I used some leftover corned beef hash. Pour inside a Ziploc bag. Meanwhile, bring water to a boil. When vigorously boiling, place the Ziploc with the eggs and boil for ten minutes.

The original method asked for 13 minutes boiling (maybe if you have more than one bag). Cut the bag and serve the omelet.

Celebrating Father’s Day

In the Philippines, Father’s Day is celebrated every third Sunday of June. But, I just read that different countries have different officially recognized Father’s Day celebrations. Some have specific a date such as March 19 in Bolivia, Italy, Portugal, Spain, Honduras and Liechtenstein. Then similar to ours, a particular day of each month. Nepal has a more interesting day, every New Moon of September!

How do you celebrate Father’s Day at home? Well, as usual, I do the cooking usually whatever dish my Dad is craving for. My first paella was on Father’s Day, although that one was what I really wanted to cook rather than his request. And we had a very late lunch then! This year, we’re probably going to have a barbecue picnic in the garden. I still have to pair it with some salads or vegetable stir fry.

Didn’t you notice, Moms tend to get cards and flowers on Mother’s Day. What about Fathers’ Day gifts? Wine? His favorite food? A necktie? Wallet? Probably enroll him to a club like a monthly beer club where they feature a beer of the month club? Hhmm… the possibilities are endless.

In the end though, what really makes the day special is spending it with the family, have long talks over lunch and just relax.

Pork Nilaga

This is an easy to make dish. Use pork spare ribs. In a pot, place spare ribs and ginger (2 inch knob) and cover with enough water. Bring to a boil and simmer until meat is almost tender. Add some gabi (taro) or potatoes and continue to boil until gabi or potatoes are tender. At this point, season with salt and pepper. I tend to be liberal with the pepper here. You can also add more ginger, if you want. When gabi/potatoes are tender, mash about a third of them and put back into the pot.

Check again for salt and pepper. Add your choice of leafy vegetables. In this instance, I added a cup of malunggay leaves. Other choices would be: dahon sili, spinach, cabbage or pechay.You can also add some green beans.

CLICK Photo Event: Yellow for Bri

This is an appeal on behalf of a group of food bloggers who are friends of Briana Brownlow @ Figs With Bri.

Bri was diagnosed with breast cancer two and half years ago. A mastectomy, chemotherapy and two years of relatively good health later, the cancer is back. It has metastasized to other parts of her body. At the age of 15, Bri lost her 41-year old mother to the disease. Now, she’s waging her own war against breast cancer. More about it here.

She is going through intensive chemo and other treatments and needs to focus single-mindedly on healing and finding what treatment works best for her. Her health insurance, unfortunately, does not cover holistic alternatives which she would like to try. Bri and her husband Marc have enough on their plates right now in addition to worrying about her medical bills.

The team organising the JUNE edition of CLICK at Jugalbandi has organised a fundraiser to help Bri and her family meet her out-of-pocket medical costs for ONE YEAR.

CLICK is a monthly theme-based photography contest hosted by Jugalbandi. This month’s theme is: YELLOW for Bri

Yellow is the colour of hope. Through the work of the LiveStrong Foundation, it has also come to signify the fight against cancer.

The target amount is 12,000 U.S. dollars. We appeal to our fellow bloggers and readers to help us achieve this. Bri deserves a chance to explore all options, even if her insurance company thinks otherwise.
