When coconut meets adobo

Adobo is one of the most popular dish from the Philippines, and is in fact considered a national dish. It usually uses pork or chicken or a combination of both (dubbed as CPA or chicken-pork adobo) which is slowly cooked in water, vinegar, soy sauce, pepper, and garlic as the basic ingedients. Variations occur in different regions of the country - in terms of ingredients and manner of cooking. Some peopel add laurel leaves, there are those who prefer their adobo dry as well some prefering to have saucy adobo. In any case, the salty-sour combo of soy sauce and vinegar and the garlicky flavor makes for a much flavorful adobo. Did I just mention vinegar? Some regions have their local vinegar from cane, coconut or other palm trees thus adding another dimension to the national dish.

Marinated chicken in a bed of sprouts

This recipe my mom got from a magazine. My mom seldom cooks so it is always a treat for us when she is in a cooking mode. She would cook it during the week while I am not at home and surprise me with a new dish come Sunday lunch when I go home.

A few weeks ago, she surprised me with this dish, inspired from Korean bulgogi. Well, in the end, I had to finish off cooking as she gave me the instruction.

Sunday breakfasts are quite special at home, where we eat the works. The works consisting of gralic fired rice, grilled pork belly, onion and tomato sidings and hot cholate eh! Yes, we have quite a heavy breakfast at home on Sundays and could go for more than an hour, usually until the animals at home start to get impatient for their victual.

But this post is not about breakfast (though it is my favorite meal of the day) nor about the grilled pork belly (which is grilled simply with salt and no other marinade). This is about the hot chocolate that comes with our breakfast.

I really like the combination of Italian sausage, pasta and red sauce. So when I made Italian sausages for the first time, I used part of it in making this really delicious pasta with Italian sausage.
